- 9 large egg whites
- 3 cups softened (room temperature) butter

- 1. Take a glass bowl and put it over simmering water

- 3. Make sure the sugar is completely dissolved, but the eggs are not cooked.
- 4. Rub it between your fingers to check for sugar granules, there should be none.
