Shambharyo or Pickle Masala Powder is a popular Gujarati spice mix used in varied pickles or as a side dish in a dip/chutney. The mix usually has a shelf life of 6 months without refrigeration and all you need to do to use it is just add the spice mix in warm oil with additional ingredients of your favourite vegetables like lemon, carrots, cauliflower, turnip or raw mango and mix it all well to have your pickle ready.
- Ingredients: 1 cup split mustard/rai seeds, ½ cup ground saunf, ¼ cup ground methi seeds, 1 cup red chilli powder, ½ cup salt, 1 tbsp hing, 1 tsp haldi and ½ cup mustard oil.
- Take a bowl and add all the ingredients together with the exception of hing and oil. Mix it all well and keep aside.
- Heat oil in a pan till it starts smoking and then switch off the flame. Pour the oil over the spice mix and add hing to it, covering it up for about 2 hours.
- Take the lid off and mix it all again and then put it in an air-tight container for storage.

Dips are chutneys everyone enjoys, which are fairly easy to make and taste heavenly! They can be healthy too if you add vegetables and herbs and skip the fattening ingredients.
- Ingredients: ¾ cup hung curd, ½ cup chopped tomatoes, ¼ cup chopped coriander, 1 tbsp tandoori spice mix, a pinch of sugar and salt to taste.

Bhakarwadi is a popular Maharashtrian/Gujarati deep fried snack made of plain flour and dry spices and looks like a pinwheel that is best served as an evening snack with a cup of tea. With a preparation time of 10 minutes, it is easy to cook in less than 15 minutes.
- Dough Ingredients: 1 cup cornflour (maida), 2 tbsp besan, ¼ tsp haldi, a pinch of hing, ½ tsp salt, 2 tbsp hot oil and water for kneading.
- Spice Mix Ingredients: ¼ cup sliced dry coconut, 1 tsp zeera, 1 tsp dhaniya seeds, 1 tsp saunf, 2 tsp sesame seeds, 1 tsp khus khus, ¼ tsp haldi, 1 tsp Kashmiri Red Chilli Powder, a pinch of hing, ½ tsp amchur, 2 tsp sugar and ½ tsp salt.
- Other Ingredients: 2 tsp imli chutney, water for greasing and oil for frying.
- Dough Preparation: In a large bowl, take maida, besan, haldi, hing, salt and mix them all well with 2 tbsps of hot oil. Now crumble the mix and mix it well ensuring the flour is moist and holds shape when pressed within your fist. Keep adding water as required and knead it to a smooth and tight dough. Finish up by greasing the dough with a tsp of oil, cover and set it aside for 20 minutes.
- Masala Stuffing: Blend all the spice mix ingredients with ¼ cup of sliced dry coconut and blend it all together to a coarse powder form without adding water and keep aside.
- Preparation: Begin with kneading the dough slightly and pinch it into a large ball, flattening it as you would when making a chapati. Now grease the roller pin and base with some oil and roll the dough into a square or round shape, slightly thicker than a chapati, spread a tsp of imli chutney on it, leaving the sides.
- Now grease the sides to seal the ends while rolling, and slowly roll the dough tightly without leaving any gaps. Next, cut the roll into 2 cm long shape or as you desire, press and flatten it a bit to layer the dough and help the spice remain intact. Now post heating the oil on a medium flame, deep fry the rolls on low flame, stirring them occasionally till they turn golden brown and crisp.
- Drain the bhakadwadis on a kitchen towel to get the excess oil off them and serve with masala tea and store them in an airtight container, once they cool down.

Nankhatai - Indian Shortbread Cookies
Nankhatai is a popular Indian sweet cookie for tea-time and easily available in most bakery stores.
- Ingredients: ¾ cup maida, ¼ cup besan, 1 tbsp semolina, ¼ tsp baking powder or a pinch of baking soda, ½ tsp cardamom powder, ½ cup powdered sugar, 1/3 cup ghee or soft butter.
- Preheat the oven to 180°C for a minimum of 15 minutes, prepare a tray with parchment paper and powder the sugar with cardamom seeds or just add the powder to the sugar. Sieve the flours, sugar, baking soda together and set it aside.
- Now, pour the ghee/butter in parts and bring the flour together to make a stiff dough, without kneading it. Make 12 balls out of the dough and then slightly flatten and pierce each with a fork lightly to make a design.
- Bake the balls for 10 minutes or until they turn light golden and crisp. Remove them to a wire rack immediately and let them all cool down, before storing in an airtight container. The cookies are good to last for at least 3 weeks. ul>

The Honey Orange Flavoured Butter can be made easily in just 5 minutes! All you need to do is:
- Ingredients: ½ cup softened butter, ¼ cup honey, 1 to 2 tsp of orange zest and ½ tsp of ground cinnamon.
- In a small bowl, combine all the ingredients and mix well. Your butter’s ready for serving. You can refrigerate the remaining after use. The recipe makes about ¾ cups of Honey Orange Flavoured Butter and has a nutritional value of 89 calories.

Crispy Chakli
There are different variants to a chakli and one of the best ways of making a crunchy Murukku is to make a stiff dough, one that’s not sticky and use it immediately by frying it. Should you wish to make the chakli with more than 2 cups of flour, then its best to make the dough in batches, always frying it on medium heat. This recipe takes about 7 minutes in preparation and cooking time of about 23 minutes with over 12 to 14 chaklis.
- Ingredients: 1 cup rice flour, ¼ cup besan, ¼ cup fried or roasted gram powder, salt to taste, 1 tbsp sesame seeds, 1 tbsp hot butter/oil, 1 tbsp ajwain, ½ tbsp red chilli powder, a pinch of hing, oil for deep fry and water as required and a chakli maker.
- Mix the rice flour, besan, fried gram powder, salt, sesame seeds, ajwain, hing and chilli powder in a large bowl to a well-blended consistency. Now, heat the oil on high flame and pour it immediately to the mix to make the chakli crunchy.
- Mix with a spoon gently and then when the oil cools down mix with your hands to spread the oil evenly. Now pour water little by little to make a dough. Do not knead it.
- Grease the chakli maker and fill it with the dough, slowly press it to release the dough making spirals, and use your fingers to end the spiral, joining the ends. Now, heat oil on medium flame and when it is hot enough, put the chaklis in hot oil one by one, frying 3-4 at a time in each batch. After a while, flip them and fry on both sides till they turn crunchy. Once done, remove the chaklis to a mesh basket and let them cool down, before transferring them to an air tight container. ul>

Gujiya
Gujiya is a traditional, deep-fried sweet, shaped like a half moon dumpling, with the outer layer made of maida, crispy yet flaky in texture and the stuffing made of khoya/mawa, sugar and nuts, making it rich and sweet in taste. The gujiya goes by different names in different parts of the country, for instance in Gujarat its called Ghughra made of semolina, dry coconut and nuts, Karanji in Maharashtra, made of coconut, milk & poppy seeds, Nevris in Goa made of coconut and jaggery and Kajjikayalu in Andhra Pradesh made of dry coconut and semolina. The recipe below takes all of 40 minutes including 20 minutes of preparation time.
- Ingredients: 4 cups maida, 200 gm khoya, 1 tbsp powdered green cardamom, ¼ cup semolina 1 cup sugar, 1 tsp finely chopped almonds, 1½ cup ghee and ¼ cup water.
- Begin by taking a bowl, adding the flour and water to make a soft dough, with some ghee to accentuate the taste. Knead the dough well by sprinkling some water and then keep it aside for an hour. In the interim, take a deep-fry pan and saute the khoya and semolina till they turn golden and then keep the mix aside to cool down.
- Now, take the sugar and the green cardamom powder with the soaked almonds, adding it all to the khoya mix and stirring it well, with an addition of dry roasted nuts and raisins should you wish, as it will give a nice crunch to the recipe.
- Next, take 2 drops of ghee and spread it on your palms, now make small round balls from the dough with a cup like space in between to fill the stuffing. Once you’ve added the stuffing, seal the corners to secure the stuffing whilst frying and roll it as per your choice of pattern.

Spiced Rum Balls
Spicy and Chocolatey, the rum balls are a delightful holiday treat, easy to make and an ideal edible gift item.
- Ingredients: 6 oz semi sweet chocolate, 3 tbsp brown sugar, ½ cup sugar, ½ cup rum, 11 oz vanilla wafer biscuits crushed, 1 cup finely chopped walnuts, icing sugar.
- Melt the chocolate and then mix all the ingredients with it barring the icing sugar. Form the mix into small balls and then roll them in the icing sugar and refrigerate. Your spiced rum balls are ready!

In a large saucepan, place the sugar, water, honey, nutmeg and spice bag, bringing it to a boil, then reduce the heat, let it simmer, uncovered. Let it cook for about 30-45 minutes, till the mix reaches the desired consistency. Remove from the heat, cool it down to room temperature, discard the spice bag and then transfer the syrup to your gift airtight container. This syrup can be stored in the refrigerator for about a month.
