How to Store Egg Whites

The dual characteristics of egg yolks and egg whites make it easier to use them in different ways. While the translucent whites offer a lightness as well as body to most desserts, the deep yellows make them the ideal binding agents. You can store egg whites in the refrigerator for two days or freeze them for nearly 3 months. However, once they are defrosted they cannot be put back in the freezer. Instead, you can defrost them overnight in the refrigerator before use. Ideally, raw egg whites should be put in airtight containers and stored immediately.

Using Egg Whites

Egg whites can be used in a variety of recipes, from meatballs to meringues. For instance, to create an authentic shiny top for burger buns or bagels, use a light layer of egg white. Use them for fluffy meringues with crisp exteriors or get a cartoon like angel cake frosting by whipping the egg whites. You can also use the egg whites by whipping them with coconut and sugar as light accompaniments to other set desserts or jellies! The stiffness of a whisked egg white makes it an ideal replacement for non-vegetarian gelatin in a set mousse.
