1. Vegetable Pakora
Pakoras are considered to be classic snacks during the monsoon season. Pakoras are crispy snacks that are made from an assortment of vegetables mixed with gram flour and deep-fried.
Ingredients Required:
- Shredded cabbage – 1 cup
- Sliced onions – 1 cup
- Carrots – ½ cup
- Beans – ½ cup
- Besan/gram flour – 1 cup
- Rice flour – ¼ cup
- Ajwain/carom seeds – 1 tsp
- Coriander leaves – ½ cup
- Green chillies – 1 tbsp
- Garam masala – 1 tsp
- Ginger and garlic paste – 1 tsp
- Salt – As required
- Oil – For frying
Method:
- Step – 1: Clean the vegetables and slice them finely for mixing.
- Step – 2: In a mixing bowl, add the vegetables, coriander leaves, garam masala, ginger, and garlic paste and salt.
- Step – 3: Allow the vegetable mixture to rest and squeeze the excess water from the mixture.
- Step – 4: Add the gram flour, rice flour, and ajwain seeds to the mixture and combine well.
- Step – 5: Ensure that the mixture is combined well and is of perfect consistency.
- Step – 6: Heat oil in a pan and ensure that the oil is hot enough.
- Step – 7: Make small portions of the dough and drop them into the hot oil.
- Step – 8: Gently turn the pakora to ensure that they are evenly fried.
- Step – 9: Fry until they are golden brown and gently remove from the oil.
- Step – 10. Serve them with tomato ketchup or green chutney.
2. Pav Bhaji – Mumbai Street Style
Pav Bhaji is a favourite dish for both children and adults. The aroma of toasted pav in butter with piping hot bhaji is a dish to die for. This iconic dish will surely warm your soul during monsoon.
Ingredients Required:
- Potatoes - 250 grams
- Chopped cauliflower – 1.25 cups
- Chopped carrot – 1 cup
- Green peas – 1 cup
- French beans – 1/3 cup
- Butter - 3 tbsp
- Cumin seeds – 1 tsp
- Onion – ½ cup
- Ginger garlic paste – 2 tsp
- Green chillies – 2
- Capsicum – 1
- Chopped tomatoes – 2 cups
- Turmeric powder – 1 tsp
- Kashmiri chilli powder – 1 tsp
- Pav bhaji masala – 3 tbsp
- Pav buns – 12
- Onion – 1
- Lime – 1
- Coriander leaves – 4 tbsps
Method:
- Step – 1: Add the chopped vegetables to a pressure cooker, and add 2 cups of water, cook them for 6 whistles.
- Step – 2: Heat a pan, add butter and allow it to melt.
- Step – 3: To the butter, add t teaspoon of cumin seeds and chopped onions. Sauté them until they turn translucent.
- Step – 4: Add ginger garlic paste and chopped green chillies and sauté well.
- Step – 5: Add chopped tomatoes, finely chopped capsicum, and mix well.
- Step – 6: Add 1 teaspoon turmeric powder and 1 teaspoon Kashmiri red chilli powder.
- Step – 7: Add pav bhaji masala to the mixture and add the cooked vegetables.
- Step – 8: With a potato masher, mash the vegetables until they form a smooth mixture.
- Step – 9: Add salt, and allow the mixture to simmer for 10 minutes until it is done.
- Step – 10: Heat a Tawa and add butter to the pan.
- Step – 11: Toast the pav buns on both sides until they are done.
- Step – 12: Serve the hot pav bun along with bhaji.
- Step – 13: Sprinkle some onions, coriander, and place a lime wedge along with the bhaji mixture.
3. Punjabi Samosa
Samosa is yet another lip-smacking snacks consumed along with hot chai on a rainy day.
Ingredients Required:
- Maida - 2 cups
- Ajwain seeds - ¼ tsp
- Cumin – 1 tsp
- Coriander seeds – ½ tsp
- Fennel – ½ tsp
- Hing – 1 pinch
- Ginger – 1 inch
- Green chilli – 1
- Peas – 1 cup
- Kashmiri red chilli – ½ tsp
- Coriander powder – ½ tsp
- Cumin powder – ½ tsp
- Amchur powder – ½ tsp
- Garam masala – ½ tsp
- Pepper powder – ¼ tsp
- Potato boiled and mashed – 4
- Cashew nuts – 5
- Coriander leaves – 2 tbsp
- Salt – as required
- Oil – as required
- Water – as required
Method:
- Step – 1: Make dough with maida, ajwain seeds, water, and salt. Grease it with oil and allow it to rest.
- Step – 2: Take a kadhai, add 2 teaspoons of oil and add cumin, coriander seeds, fennel, and a pinch of hing.
- Step – 3: Add finely chopped ginger, green peas, chilli powder, coriander powder, cumin powder, amchur powder, garam masala, pepper, and salt.
- Step – 4: Add the boiled potatoes and mix well.
- Step – 5: Add cashew nuts and coriander leaves to the mixture.
- Step – 6: Roll the dough into an oval shape and cut it horizontally, diving into 2 equal portions using a knife.
- Step – 7: Roll the portion into a cone and add potato mixture in the cone.
- Step – 8: Grease the edges with water and seal the edges.
- Step – 9: Heat oil in a pan and once hot, drop the samosa into the water and fry them well.
- Step - 10: You can also bake them at 180 degrees Celsius for 40 minutes.
- Step - 11: Enjoy the hot samosa with green chutney and tamarind chutney.
4. Bombay Masala Toast
Bombay masala toast is famous street food in Mumbai. It is stuffed with mashed potatoes, vegetables, and grilled until they are crisp.
Ingredients Required:
- Green chutney
- Coriander leaver – 1 cup
- Chat masala – ½ tsp
- Green chillies – 2
- Salt – as required
- Potato masala
- Boiled potatoes – 1.5 cups
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
- Green chillies – 2
- Curry leaves – ¼ cup
- Turmeric powder – ¼ tsp
- Hing – 1 pinch
- Coriander leaves – 1/3 cup
- Salt – as required
- Bread – 10 slices
- Onion - 1 chopped
- Tomato – 1 chopped
- Capsicum – 1 chopped
- Roasted cumin powder – 1 tsp
- Black salt – ¼ tsp
Method:
- Step – 1: Blend coriander leaves, green chillies, salt, and little water to obtain a fine paste.
- Step – 2: Mash the potatoes well.
- Step – 3: Heat oil in a pan, add the mustard seeds and allow them splutter.
- Step – 4: Add ½ tsp cumin seeds and a pinch of asafoetida.
- Step – 5: Add the finely chopped green chillies, ¼ tsp turmeric powder, and 8 to 10 curry leaves.
- Step – 6: Add the mashed potatoes to the mixture and sauté well.
- Step – 7: Add the rest of the spices and add ⅓ cup chopped coriander leaves. Turn off the heat and allow the mixture to cool.
- Step – 8: Butter the bread evenly and toast on either side.
- Step – 9: Spread green chutney on one side of the bread and add potato filling on one side.
- Step – 10: Place the 1 or 2 tomato slices and onion slices. Sprinkle a pinch of chat masala, black salt, and cumin powder.
- Step – 11: Grill the sandwich on both sides and serve hot.
5. Homemade Tomato Soup
A warm soup made from fresh vegetables and tomato can warm a cold soul and cure all ailments.
Ingredients Required:
- Chopped carrots – 2
- Onion – ½ cup
- Garlic cloves – 4
- Tomato paste – 1.5 tbsp
- Flour – 1 tbsp
- Vegetable/Chicken broth – 4 cups
- Dried thyme – ½ tsp
- Bay leaf – 1
- Pureed tomatoes – 1 cup
- Cream – 1 tsp
- Salt – as required
Method:
- Step – 1: In a saucepan, sauté carrots, onions, and garlic.
- Step – 2: Add the tomato paste and stir for a few minutes.
- Step – 3: Add the flour and mix well and ensure it does not burn.
- Step – 4: Pour the tomato puree and mix well.
- Step – 5: Season the mixture with dried thyme, vegetable/chicken broth, and bay leaf.
- Step – 6: Allow the mixture to simmer for 30 minutes.
- Step – 7: Serve with toasted bread crumbs or croutons.
6. Hot Chocolate

- Milk – 4 cups
- Unsweetened cocoa powder – ¼ cup
- Granulated sugar – ¼ cup

- Vanilla extract - ¼ tsp
Method:
- Step – 1: Heat milk in a pan and allow it to boil. Add the cocoa powder and mix gently.
- Step – 2: Add sugar to the milk and mix well.
- Step – 3: Add chocolate chips and whisk gently.
- Step – 4: Add the vanilla extract.
- Step – 5: Serve hot with whipped cream and marshmallows.
7. Sabudana Vada
A delicious fried patty made from tapioca pearls, potatoes, and peanuts that just tingles your taste buds.
Ingredients Required:
- Tapioca pearls – 1 cup
- Potatoes – 4
- Peanuts – ½ cup
- Cumin seeds – 1 tsp
- Green chillies – 1
- Ginger – 1 tsp
- Lime juice – 2 tsp
- Chopped coriander leaves – 2 tbsp
- Sugar – 2 tbsp
- Buckwheat/amaranth flour – 2 tbsp
- Rock salt - as required
- Oil – for frying
Method:
- Step – 1: Soak the tapioca pearls in the water for 5 hours or overnight.
- Step – 2: Drain the water and add it to a mixing bowl.
- Step – 3: Boil the potatoes, mash them and add it to the tapioca pearls.
- Step – 4: In a pan, roast the groundnuts until they are crispy. Crush them coarsely and add to the mixture.
- Step – 5: Add rock salt, cumin seeds, sugar, ginger, green chillies, coriander leaves, and lemon juice.
- Step – 6: Make into small balls and flatten them gently.
- Step – 7: Heat oil in a pan and once ready, add the patties into the oil.
- Step – 8: Fry them until they turn crispy.
8. Ramen Noodle Soup
Wholesome monsoon recipes made with fresh vegetables and eggs to keep you warm during cold rainy nights.
Ingredients Required:
- Instant noodles – 250 grams
- Oil - 2 tbsp
- Garlic cloves – 4
- Ginger – 1 inch
- Fresh red chillies – 2
- Spring onions – 2
- Mushrooms – 10
- Soy sauce – 1 tsp
- Vinegar – 1 tsp
- Red chilli sauce – 1 tsp
- Tastemaker – 2 tbsp
- Chicken stock – 1 cup
- Coriander leaves – ¼ cup
- Prawns – 12
- Carrot – 1 medium
- Bean sprouts – ½ cup
- Egg – 1 boiled
Method:
- Step – 1: Heat oil in a non-stick pan. Add garlic, ginger, chillies, and sauté till garlic turns golden brown.
- Step – 2: Add some spring onion bulbs, mix, and cook for 2 minutes. Add mushrooms, mix and cook till mushrooms release water. Add salt, mix and cook for a minute.
- Step – 3: Add soy sauce, vinegar, chilli sauce, tastemaker, mix, and cook for a minute. Add chicken stock, mix and bring to a boil.
- Step – 4: Roughly break noodles and add to the pan, mix well, and cook for 2-3 minutes.
- Step – 5: Finely chop the coriander, add to the soup, mix and cook for a minute. Add prawns, mix well and bring the soup to a boil.
- Step – 6: Add carrot juliennes mix and cook for a minute. Add 2 tablespoons spring onion greens and bean sprouts and mix well.
- Step – 7: Transfer the noodles to the centre of the serving bowl, pour the soup, and add the prawns.
- Step – 8: Garnish with remaining spring onion bulbs, carrot juliennes, egg, and spring onion greens.
- Step – 9: Drizzle soy sauce on top, sprinkle coriander leaves and fresh red chillies.
