  • Pav bhaji masala – 3 tbsp
  • Pav buns – 12
  • Onion – 1
  • Lime – 1
  • Coriander leaves – 4 tbsps

Method:

  • Step – 1: Add the chopped vegetables to a pressure cooker, and add 2 cups of water, cook them for 6 whistles.
  • Step – 2: Heat a pan, add butter and allow it to melt.
  • Step – 3: To the butter, add t teaspoon of cumin seeds and chopped onions. Sauté them until they turn translucent.
  • Step – 4: Add ginger garlic paste and chopped green chillies and sauté well.
  • Step – 5: Add chopped tomatoes, finely chopped capsicum, and mix well.
  • Step – 6: Add 1 teaspoon turmeric powder and 1 teaspoon Kashmiri red chilli powder.
  • Step – 7: Add pav bhaji masala to the mixture and add the cooked vegetables.
  • Step – 8: With a potato masher, mash the vegetables until they form a smooth mixture.
  • Step – 9: Add salt, and allow the mixture to simmer for 10 minutes until it is done.
  • Step – 10: Heat a Tawa and add butter to the pan.
  • Step – 11: Toast the pav buns on both sides until they are done.
  • Step – 12: Serve the hot pav bun along with bhaji.

  • Step – 1: Make dough with maida, ajwain seeds, water, and salt. Grease it with oil and allow it to rest.
  • Step – 2: Take a kadhai, add 2 teaspoons of oil and add cumin, coriander seeds, fennel, and a pinch of hing.
  • Step – 3: Add finely chopped ginger, green peas, chilli powder, coriander powder, cumin powder, amchur powder, garam masala, pepper, and salt.
  • Step – 4: Add the boiled potatoes and mix well.
  • Step – 5: Add cashew nuts and coriander leaves to the mixture.
  • Step – 6: Roll the dough into an oval shape and cut it horizontally, diving into 2 equal portions using a knife.
  • Step – 7: Roll the portion into a cone and add potato mixture in the cone.
  • Step – 8: Grease the edges with water and seal the edges.
  • Step – 9: Heat oil in a pan and once hot, drop the samosa into the water and fry them well.
  • Step - 10: You can also bake them at 180 degrees Celsius for 40 minutes.

  • Step – 1: Blend coriander leaves, green chillies, salt, and little water to obtain a fine paste.
  • Step – 2: Mash the potatoes well.
  • Step – 3: Heat oil in a pan, add the mustard seeds and allow them splutter.
  • Step – 4: Add ½ tsp cumin seeds and a pinch of asafoetida.
  • Step – 5: Add the finely chopped green chillies, ¼ tsp turmeric powder, and 8 to 10 curry leaves.
  • Step – 6: Add the mashed potatoes to the mixture and sauté well.
  • Step – 7: Add the rest of the spices and add ⅓ cup chopped coriander leaves. Turn off the heat and allow the mixture to cool.
  • Step – 8: Butter the bread evenly and toast on either side.
  • Step – 9: Spread green chutney on one side of the bread and add potato filling on one side.
  • Step – 10: Place the 1 or 2 tomato slices and onion slices. Sprinkle a pinch of chat masala, black salt, and cumin powder.
  • Step – 11: Grill the sandwich on both sides and serve hot.

  • Step – 5: Add rock salt, cumin seeds, sugar, ginger, green chillies, coriander leaves, and lemon juice.

  • Step – 7: Heat oil in a pan and once ready, add the patties into the oil.

  • Carrot – 1 medium
  • Bean sprouts – ½ cup
  • Egg – 1 boiled

Method:

  • Step – 1: Heat oil in a non-stick pan. Add garlic, ginger, chillies, and sauté till garlic turns golden brown.
  • Step – 2: Add some spring onion bulbs, mix, and cook for 2 minutes. Add mushrooms, mix and cook till mushrooms release water. Add salt, mix and cook for a minute.
  • Step – 3: Add soy sauce, vinegar, chilli sauce, tastemaker, mix, and cook for a minute. Add chicken stock, mix and bring to a boil.
  • Step – 4: Roughly break noodles and add to the pan, mix well, and cook for 2-3 minutes.
  • Step – 5: Finely chop the coriander, add to the soup, mix and cook for a minute. Add prawns, mix well and bring the soup to a boil.
  • Step – 6: Add carrot juliennes mix and cook for a minute. Add 2 tablespoons spring onion greens and bean sprouts and mix well.
  • Step – 7: Transfer the noodles to the centre of the serving bowl, pour the soup, and add the prawns.
  • Step – 8: Garnish with remaining spring onion bulbs, carrot juliennes, egg, and spring onion greens.
  • Step – 9: Drizzle soy sauce on top, sprinkle coriander leaves and fresh red chillies.
