What you need:
  • 750 gm plain flour, sifted
  • 1 tsp salt
  • 450 gm unsalted butter, softened
  • 400 gm sugar
  • 2 large eggs, cold
  • 1 tbsp vanilla extract
  • ¼ tsp lemon extract


How to make it:
  • Sift together salt and flour in a large bowl and set it aside.
  • Using a hand mixer, beat together butter and sugar till light and fluffy. Beat in the eggs, one at a time.
  • Switch to a spatula and mix in the flour till evenly combined. Add the vanilla and lemon extracts. Turn the dough onto a lightly floured counter and knead together gently, about a minute.
  • Divide the dough in two. Working with one portion, place it on a piece of plastic wrap, wrap it loosely and press down with your hands to make a 2 inch thick disk. Wrap the disk in plastic wrap and allow it to chill in the refrigerator for about an hour. Repeat with the remaining dough.
  • Remove one disk and place it between two large sheets of baking paper and roll it out evenly to ¼ inch thick. Keeping the paper in place, slide it onto a baking sheet and chill again. Repeat with second disk.
  • Remove after 30 minutes and cut out into desired shapes, placing them on a baking sheet lined with parchment paper. Chill each sheet in the freezer for 15 minutes before baking at 175 degrees C for about 12 minutes or till edges are golden brown.
  • Allow baked cookies to rest on baking sheets for about 10 minutes before transferring them to a cooling rack. Decorate with icing or fondant once they are completely cooled.
