Ingredients:

  • Sugar: ½ cup or 100 gm
  • Eggs: 4 (separate the yolk from the white)
  • Bananas: 2 (ripened)
  • Unsalted butter: 100 gm (melted)
  • All purpose flour: 1 cup or 120 gm
  • Vanilla extract: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Salt: a pinch (you can skip the salt if you want)

Method:

  • Take the ripened bananas and puree them in a blender.
  • Grease and flour the pot of the rice cooker, however if the rice cooker pot has a Teflon coating you don't need to grease it.
  • Take a large bowl and whisk the egg whites until you see medium peaks in it.
  • Add sugar in 3 small batches into the eggs.
  • Add the egg yolks, banana puree, melted butter and vanilla extract to the egg whites. You will need to add these ingredients one by one mixing them completely after each one is incorporated.
  • Take the dry ingredients and fold them into the wet ingredients. Use a wooden spatula, avoid mixing it, you need to fold it in to let the air into the batter.
  • Pour the mixed batter in the pot and place it in the rice cooker. Press the cook button and wait till it is warm. Wait for 10 minutes and repeat the cook and warm cycle for 3 more minutes. Continue this process for 4 cycles.
  • Check the cake by inserting a skewer. If it comes out sticky you can repeat the cook and warm cycle till the cake is done.
  • Take out the pot from the cooker and turn it upside down on a plate.
  • Your cake is done, you can serve it warm with a cup of coffee or eat it later.

  • Add bran flakes, milk, cinnamon, nutmeg and vanilla extract in a different bowl, leave it aside till the bran flakes absorb the milk, it should take about 5 minutes.
  • Add egg into the bran mixture.
  • Add flour into the bran mixture, don't over mix it.
  • Now fold the diced fruits and raisins in the batter gently and pour the mixture into the rice cooker bowl.
  • Bake the cake in the cooker for 3 cycles and check it by inserting a toothpick or a skewer in after about 30 minutes.

Tips on Baking a Cake at Home

Baking is a lot of fun and is a great time pass too. You can bake different cakes, cookies and pies and have a party practically every day but baking is also a science. If you want to make a perfect cake you need to learn the formula for baking it. Here are some tips that can be used as formulas and help you bake great goodies:

  • To bake a light cake with the perfect fluff you will have to use room temperature butter, eggs and milk. Adding them cold will solidify and won't give the best results.
  • If you don't have butter or shortening you can substitute one with the other but don't substitute liquid fat with solid.
  • If you need to use separated eggs, you should first bring them to room temperature and then separate them. It is easier than trying to separate them when they are cold.
  • Make sure you grease and flour the pan before you pour the batter in. You can also use parchment paper. You should also flour the pan by sprinkling it in the pot and shake out the excess.
  • Always set the timer for 5 minutes lesser than the recipe states, it is better to be careful than burning the cake.
  • You should remove the cake immediately after it is done, because if you leave it in the oven or in the hot pan it will continue to bake because of the heat. You can check if the cake is done by giving it a light press in the centre. If it bounces back it is done perfectly.

  • If your cake is dry then you might have not measured the ingredients properly. Spoon the flour in the cup and level it evenly. Your cake might turn out to be dry due to over-baking. To check if the cake is done, you should see if the cake is slightly pulling away from the corners of the pan and the skewer should come out clean after inserting it.
  • If your cake comes out hard then you might have over-mixed it or might have used the wrong flour. When you mix the flour with liquid or fat gluten is developed which is not desirable in a cake therefore mix the batter thoroughly. Using the correct flour is very important to get a soft and moist cake.
