  • To make this cake sift together 3 cups of gluten-free oat flour, 1 1/3 cups unsweetened cocoa powder, 2 teaspoons of baking soda and a ½ teaspoon of salt.
  • Whisk together 1 ¼ cups water, 1 cup non-dairy milk like almond or coconut milk, ¼ cup + 2 tablespoons melted coconut oil, ½ cup coconut sugar, ½ cup pure maple syrup and 2 teaspoons vanilla extract.
  • Fold in the dry and wet mixture together. Pour the mixture into two greased cake tins and bake in an oven which has been preheated to a temperature of 350°F.
  • For the frosting, use coconut cream and vegan chocolate chips.
  • Cool the coconut cream in the fridge and pour in melted chocolate chips. Chill the frosting in the fridge. Wait for the cakes to cool completely before applying frosting. Apply frosting on one cake and place another on top of it. Cover with frosting.

Healthy Carrot Cake

  • Whisk 3 eggs together in a bowl. In another bowl mix 1-2 bananas, 10-15 fresh de-seeded dates and 6 tbsp of sunflower oil until creamy. Sift together 1 cup whole wheat flour, 1 ½ tsp baking powder, 3 tsp cinnamon, ½ tsp nutmeg and ½ tsp cardamom.
  • Mix wet and dry ingredients together.
  • Mix in 3-4 grated carrots,½ cup coconut flakes, ½ cup chopped walnuts and 1/2 cup raisins.
  • Pour into greased tins and bake in an oven preheated to 350°F.
  • For the glazing mix together 200 g cream cheese, 3 tbsp honey and juice of 1/2 a lime.
  • Apply frosting once the cakes are completely cooled. Sprinkle 1/2 cup chopped hazelnuts on top.

  • This healthy frosting is made by boiling together 1 cup plain soymilk, 1/3 cup coconut milk, 1 1/4 cups sugar, 1 teaspoon vanilla extract, 1/3 cup corn starch mixed with 1/4 cup water, 2 1/2 cups sweetened flaked coconut and 1 1/2 cups chopped pecans.
  • Cook over medium-high heat until the whole mixture is thickened and syrupy.
  • Let it cool slightly (for 10 minutes or so) before spreading over the cake.

Easy Yogurt Cake

If complicated recipes make you nervous then we have the perfect cake for you. This easy yogurt cake is something that requires very few ingredients and very little time.

  • Just beat together 3 eggs and add 1 cup of yogurt (you can use Greek yogurt or flavoured yogurt as well), ½ cup of oil, ¾ cup of sugar. Mix together until smooth and add 1 ½ cups of flour, and 1 ½ teaspoon of baking powder.
  • Pour into a greased tin and bake in an oven preheated to 350°F. You can serve this cake by itself or with a blueberry or raspberry syrup.
  • To make the syrup, mix together berries, sugar, corn starch, water and lemon juice, bring to a boil and then simmer until it thickens. Cool and pour over the yogurt cake before serving.

Chocolate Raspberry Greek Yogurt Cheesecake

If you love cheesecake but are on a diet then we have the perfect recipe to satisfy your cravings. This Chocolate Raspberry Greek Yogurt Cheesecake is creamy, sweet and incredibly delicious.

  • To make the base of the cheesecake crush 140 gm of graham crackers and add a pinch of salt to it. Add 5 tbsp of coconut oil to the mixture and mix well. Press down the mixture onto a cake tin using the bottom part of a glass. Bake in an oven preheated to 350°F for 35 mins.
  • Crush 340gm of frozen raspberries, until smooth and pass through a sieve to remove seeds.
  • Melt ¾ cup of dark chocolate chips and 2 tsp of coconut oil in the microwave.
  • In a blender put 900gms of Greek yogurt, 3 whole eggs 2 tsp of vanilla extract, a ½ cup of organic sugar, 2 tbsp of corn starch and blend. Divide the mixture into three parts. Keep one part plain, mix one with the melted chocolate and the other with half of the raspberry puree. Pour one mixture over the crust and freeze for 10 mins. Then pour the next and freeze again, till all the layers are done. Add the remaining raspberry puree on top and create swirls with a toothpick.
  • Place the cake tin inside a baking tray and pour warm water on the tray. Bake for 35 mins at 350°F. Chill in the fridge for 3-4 hours and decorate with fresh raspberries and chocolate shavings.

Lemon and Chia Seed Cake

  • To make the healthy, gluten-free Lemon and Chia Seed Cake mix together 1 banana,1 cup vanilla almond milk, 1 teaspoon vanilla, 1 tablespoon chia seeds, ¼ cup fresh lemon juice and zest of 1 small lemon and liquid stevia or ¼ cup sweetener of your choice.
  • Sift together ¼ cup coconut flour, ¼ cup millet flour, 1 teaspoon baking powder, ½ teaspoon baking soda 2 tablespoons corn starch and 1/2 teaspoon cinnamon.
  • Combine wet and dry ingredients and pour into tins greased with coconut oil. Bake in an oven preheated to 350°F. This cake is vegan-friendly as well.

Persimmon Bundt Cakes

Making a low-calorie cake is definitely a challenge, but these Persimmon Bundt Cakes have risen up to it. They are a mere 200 calories a serving. To make these mini bundt cakes:

  • 1 1/4 cup cubed Fuyu persimmons, 1 tablespoon lemon juice, 1 tablespoon coconut oil or 2 tablespoons unsweetened applesauce and 1/2 cup agave nectar.
  • In another bowl combine 2 cups whole-wheat flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon ginger, 1/2 teaspoon freshly grated nutmeg, 1/2 teaspoon salt and 1/4 cup raisins.
  • Mix wet and dry ingredients together and pour into mini greased bundt pans. Bake in an oven preheated to 350°F.

Gluten Free Fruit Cake

If you love fruit cakes then you will love this one. This healthy gluten free fruit cake tastes much better than the store bought version.

  • Before you set around to making the cake soak the mixed dried fruits in 2/3 cup Disaronno or any amaretto for at least 2 days.
  • Strain the fruits after two days, reserving the liquid. Beat 1/2 cup butter and 3/4 cup sugar till smooth and airy.
  • Add 3 egg yolks, 1 teaspoon vanilla extract and finely grated zest of 1 lemon and an orange.
  • Mix 1 cup gluten-free flour, 1/2 teaspoons baking powder, 1/2 teaspoon salt. Mix both mixtures together and add 1/2 cup milk. Beat together the egg whites of 3 eggs until stiff and foamy. Fold into the cake batter, add the strained fruits and 1 cup chopped pecans.
  • Pour into the greased cake tin and bake in an oven preheated to 325°F for 1 hour.

Harvest cakes are so named because the recipe uses a lot of vegetables. It’s a great way to make your children eat vegetables.

  • To make the cake sift together 2 1/2 cups of unbleached all-purpose flour 3 teaspoons Of baking powder, 1 1/2 teaspoons of baking soda, 1/2 teaspoon of cinnamon and 1/4 teaspoon of salt.
  • In another container mix 1 1/3 cups grated carrots, 1 cup grated zucchini 1 cup finely grated beets, 3/4 cup chopped walnuts and 1/2 cup raisins.
  • Beat together 1 1/3 cups pure maple syrup and 2/3 cup safflower, canola or other mild-tasting oil. Add 4 eggs, one at a time and mix in well. add the flour mixture and the veggies. Mix till smooth.
  • Pour into greased tins and bake in an oven preheated to 400°F for 25-35 mins.
  • To make the frosting eat goat cheese and cream cheese together until light and airy. Add powdered sugar and mix at low speed until smooth and creamy. Add maple syrup and chill until firm.

Fruit Only Tiered Cake

Our last and final healthy cake is for people who are either not that fond of the cake or are trying to stay super healthy. This fruity birthday cake requires no baking and uses only fresh fruits. The tricky part is skilfully carving each fruit so that they fit on top of each other. Each layer is made entirely of fruits like watermelon and musk melon.
