#1: Biscuit Cake
This is how you can make this delicious "no-bake" biscuit cake:
Ingredients Required:
- 250 gm glucose biscuits (You can choose any other biscuit instead of glucose biscuits - Marie, digestive, or sweet crackers)
- 80 gm chocolate
- ½ tbsp instant coffee
- ½ cup milk
- 1 tbsp cocoa powder
How to Make:
- Use a medium sized cake pan. Line it with a parchment paper or butter paper.
- Warm ⅓ cup water in a small pan. The water should be slightly hot.
- Transfer it to a bowl. Add the ½ tbsp coffee powder to it. Mix well and keep it aside.
- You can use cocoa powder or drinking chocolate instead of coffee powder.
- Now, take ½ cup milk in a saucepan. The alternatives are soy milk or almond milk.
- Add the cocoa powder to the milk and mix well without lumps.
- Now add sugar to suit your taste.
- On a medium flame, heat the mixture, and keep stirring with a wired whisk till the sugar dissolves.
- Simmer the stove, when the mixture comes to boil, and stir for 2-3 minutes. Switch offer after 3 minutes, and add chopped chocolates to this mixture.
- Take the pan off the stove and mix thoroughly. The chocolates will melt in the heat, and the mixture will turn glossy.
- Keep this aside. Now, dip the biscuits in the coffee solution without breaking them.
- Coat the biscuits with the coffee solution and place them in a single layer.
- Then continue to do the same and place 2 layers.
- Pour ½ of the chocolate icing on the biscuits.
- Make the 3rd layer and the 4th layer. Pour the remaining chocolate mixture over the biscuits.
- Cover the cake with a paper, and refrigerate for 5 hours or overnight.
- Open gently and slice carefully. This layered cake is yummy and is easy to make. Kids would enjoy the flavour.
#2: Pineapple Cake
Ingredients Required:
- ¾ cup all-purpose flour
- 4 eggs
- ¾ cup powdered sugar
- ¾ tsp vanilla essence
- ¾ tsp baking powder
- 1 cup chopped pineapple (you can also use tinned pineapples that come in syrup
- ¼ cup pineapple syrup
- 2 cups cream (whipped and chilled)
- 2 cake tins, 8 inch round and lined with parchment paper
How to Make:
- Preheat the oven to 204°C.
- Grease the tin and coat with flour or granulated sugar.
- Break the eggs in a mixing bowl one by one.
- To this bowl add the vanilla essence, salt, baking powder and sugar.
- Beat the mixture thoroughly till it becomes foamy and light. The right consistency is when you take the blender off the mixture, it should form a trail. The trail should blend with the batter immediately.
- Now, add the all-purpose flour to this mixture. Add 1 tbsp initially with a rubber spatula, with the cutting and folding method. Use the upward, downward and outward strokes.
- Keep adding rest of the flour in the same manner.
- Bake in the preheated oven for 15 minutes.
- When done, you should be able to insert a clean knife and when you remove it, the knife should come out clean.
- Cut into layers when cooled. On one layer, sprinkle ½ of the pineapple syrup and spread the whipped cream.
- Then place another layer of cake, and pour the rest of the pineapple syrup, and cover the cake with the whipped cream.
- Decorate with the pineapple slices.

#3: Chocolate Cake in Microwave
Ingredients Required:
Dry Ingredients:
- ¾ cup all purpose flour
- 6 tbsp cocoa powder
- ½ tsp salt
- ¾ tsp baking powder
- ¾ tsp baking soda
- 1 cup sugar
Wet Ingredients:
- ½ cup milk
- ¼ cup oil
- ½ cup boiling hot water
- 2 tsp vanilla extract
- 1 egg
For Frosting:
- ½ cup unsalted butter
- 4 tbsp cocoa powder
- 1½ tbsp milk
- 1 tsp vanilla extract
- 1¾ cup powdered sugar
How to Make:
- Preheat the oven at 175°C for 15 minutes, and grease an 8 inch pan and line it.
- In a bowl, add the flour, cocoa, baking powder and salt by sieving them together.
- Stir well after adding sugar.
- In the centre of the bowl, make a well, to pour milk, egg and vanilla extract.
- Whisk well and combine all the ingredients without lumps.
- Now, add boiling hot water to make it a runny batter.
- Pour into the cake pans, and tap them to release air.
- Bake in the preheated oven for 30 minutes.
- Leave the cake in the wire rack for 10 minutes, and invert after it cools. Let it cool completely before frosting.
- Make sure the butter is soft but still cold. Beat for two minutes, to make it creamy and light.
- Add all the ingredients for frosting except the milk. Beat together to make them creamy and light.
- If you find the frosting is thick add milk and beat. If it is runny add powdered sugar.
- Keep in fridge for some time, and then spread over the cake.
- You can use the chocolate cake for a week by refrigerating.

#4: Fruit Cake
Ingredients Required:
- 40 gm raisins
- 30 gm apricots
- 20 gm cranberries
- 60 gm glazed cherries, all chopped.
Spice Ingredients:
- 1 small piece nutmeg
- 1.5 gm of Ceylon cinnamon
- 8 cloves
For the Fruit Cake:
- 20 gm citrus peels
- ¾ cup hot water
- ¼ tsp salt
- 1 tbsp vinegar
- 1 tbsp vanilla extract
- ¾ cup brown sugar
- 120 ml orange juice
- ⅓ cup oil
- 1 tsp baking soda
- 1¾ cup wheat flour
- 100 gm chopped nuts
How to Make:
- To make the cake, chop all the nuts and set aside.
- In a mixing bowl, put apricots, raisins, citrus peels and cranberries.
- Boil ¾ cup and 1½ tbsp water, and pour over the dry fruits. Keep aside to cool.
- Make a fine powder of the spices in a processor.
- Preheat the oven to 170°C for 15 minutes.
- Now to the fruit mixture, added melted butter, vanilla, vinegar, orange juice, and sugar. Stir everything together.
- Sieve the flour, spice powder, soda and salt in a bowl together. Mix the flour finely, and make a well in the middle.
- By this time, the oven would have been preheated for 15 minutes. Mix all the flour with the cooled down fruit mixture.
- There should be no streaks of flour, and mix with a spatula. Add the chopped nuts and cherries. Stir gently.
- Transfer the mixture to the cake pan, and tap it against the counter-top twice. If you overdo it, the nuts will settle at the bottom.
- Bake in the preheated oven for 30-45 minutes. In a loaf pan it will take about 50 minutes, and in a 9 inch pan, it will get done in 30 minutes.
- Cool the cake after it is done for 10 minutes.
- Slice after it completely cools down. Dust with powdered sugar. A healthy fruity cake for your kids to get the nourishment, with a mouth-watering recipe.
#5: Vanilla Cake in Cooker
Making a vanilla cake in a pressure cooker, without an oven, is easy, and you need not compromise on the taste.
Ingredients Required:
- 1½ cup all-purpose flour
- ½ tsp baking soda
- 1¼ tsp baking powder
- A pinch of salt
- ½ cup oil
- ¾ cup sugar
- 1 cup milk
- 2 tsp vanilla extract
- 1¼ tbsp vinegar
- 100 gm chocolate (for frosting, optional)
How to Make:
- Use a 7 inch tray and grease it. Line it with a parchment paper and keep it aside.
- In the pressure cooker, spread the salt evenly.
- Cover with a plate, and over it place a ring or hot pot stand.
- Take off the gasket and weight. Heat the cooker after covering it.
- While it gets heated, make the cake butter.
- In a mixing bowl, add the sugar, vanilla, vinegar and milk.
- Stir till the sugar dissolves, and add flour, baking soda, baking powder, and salt as you sieve into the bowl. Mix gently to combine the flour mixture.
- Pour to the greased pan, and knock thrice on the counter. For a golden glaze, brush the top with milk.
- Now the tray has to be placed inside the cooker. The cooker would have been heated now, and keep the tray on the ring or stand.
- Cover the cooker and bake for 50-60 minutes over low flame. When done, the top should be dry, and a knife would come out of it clean.
- Let it cool on a wire rack, and slice when cooled fully.
- For the optional frosting, melt the chocolate using the double boiling method.
- When it smoothly melts, cool it. On the cooled cake, pour this melted chocolate.
- Spread it evenly and decorate with chocolate sprinkles, if available. An enchanting feast for the eyes, and a scrumptious cake that delights the kids.
#6: Dates and Walnut Cake
Ingredients Required:
- 1½ cup whole wheat flour
- ½ all-purpose flour
- ½ cup vegetable oil
- ¾ cup sugar
- 1 cup milk (substitute with almond or soy milk for vegan recipe)
- 1 cup water
- 1 cup seedless dates
- ½ cup walnuts
- 2 tsp instant coffee
- 1 tbsp cacao nibs or chocolate chips
- ½ tsp vanilla bean powder or vanilla extract
- ½ tsp baking soda
- 1 tsp baking powder
- A pinch of salt
How to Make:
- To begin with chop the dates and walnuts, and set aside.
- Grease the cake pan.
- Heat the milk, and add coffee powder to it. Add the dates and stir. They should be in the milk for 15 minutes.
- Sieve the flours, salt, baking soda and baking powder.
- Preheat the oven after sieving at 200°C.
- Add vanilla powder and sugar to the flour.
- Now, mix the sieved flours to the milk mixture in a bowl, along with the oil, walnuts and a cup of water.
