  • 3 cups thin poha
  • 2 tbsp oil
  • 1 tsp mustard seeds

  • 1/4 cup roasted chana dal
  • 2 tbsp cashew nuts
  • 1/2 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tbsp powdered sugar
  • salt to taste


    Method
  • Heat a deep non-stick pan and dry roast the poha on a medium flame for 2 to 3 minutes. Stir them continuously until they turn crispy. Then keep it aside.
  • Heat oil in a deep non-stick pan and add curry leaves and mustard seeds in it.
  • After the seeds crackle, add peanuts, roasted chana dal and cashew nuts. Mix them well and cook them on a medium flame for 2 to 3 minutes while stirring continuously.
  • Add the roasted poha with chili powder, powdered sugar and salt. Mix them well and cook it on a medium flame for 2 to 3 minutes. Keep on stirring it continuously.
  • Keep is aside so that it can cool down.
  • Store in an airtight container.

  • Add 2 tbsp tomato, ½ tsp chaat masala, ¼ tsp chilli powder and ¼ tsp salt
  • Add 3 tbsp tamarind chutney, 2 tbsp green chutney and 1 tsp lemon juice and mix the ingredients well.
  • Add 2 tbsp sev and mix it well.
  • Top it with crushed papdi.

  • 5 ounces bag tortilla chips

  • ¼ cup olive oil
  • 2 cloves garlic, thinly sliced

  • 1 small sweet potato
  • ¼ teaspoon coarse sea salt or table salt

    Method
  • In a small saucepan, heat oil, garlic, thyme, and oregano over medium-low heat for 15 minutes. If garlic starts to bubble, turn heat to low.
  • Remove from heat. Let it cool and remove garlic and herb sprigs from the oil.
  • Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper; brush the paper with some of the 2 tablespoons herb-infused oil.
  • Scrub the potatoes and cut them with a size of 1/8 inch thick.
  • Arrange russet potato slices in a single layer on one of the prepared baking sheets; arrange sweet potato slices in a single layer on the other prepared sheet.
  • Brush tops of potato slices with the remainder of the 2 tablespoons herb-infused oil.
  • Bake potatoes, one sheet at a time, for 24 to 26 minutes or until potatoes are golden brown, turning potato slices once halfway through baking.
  • Sprinkle lightly with salt. Serve immediately
