The Outer Cover

  • Maida – 1 cup
  • Salt – as needed
  • Oil – as needed

Stuffing

  • Paneer – ¼ cup, crumbled
  • Green chillies – chopped, as needed
  • Onions - – ¼ cup, chopped
  • Schezwan sauce – 3 spoons
  • A paste of garlic and ginger – 1 spoon
  • Capsicum – 1 cup, chopped
  • Salt – as needed
  • Oil – as needed
  • Pepper – as needed

Method

  • Take the flour, salt, and a spoon of oil in a bowl.
  • Add some water to it and mix well into a dough.
  • Heat some oil in a pan over medium flame.
  • Then add the green chillies and the ginger-garlic paste. Sauté it for a minute.
  • Add the capsicum and onions along with the Schezwan sauce.
  • The salt and pepper along with the crumbled paneer must be added next. Toss the ingredients so that they combine properly.
  • Once it is done, turn off the heat and keep it aside.
  • Take small portions of the dough and roll them as small discs.
  • Stuff some of the mixture in each disc. Next, you fold them and seal the edges.
  • The discs must be fried until they are golden brown.

Green Peas Kabab

Kebabs are a great choice to be on the party menu, but what about vegetarian kebabs! There aren’t many options, but the one made from green peas will melt in your mouth.

Ingredients

  • 1 large boiled potato
  • Green peas – one cup, frozen
  • Cumin seeds – one spoon
  • Sunflower oil – one spoon
  • Coriander leaves – one spoon
  • Mint leaves – one spoon
  • Lemon Juice – two spoons
  • Garam masala – Half spoon
  • Coriander powder – One spoon
  • Ginger – one spoon, freshly grated
  • One green chilli

For Outer Coating

  • Corn flour -four spoons
  • Breadcrumbs, as needed
  • Oil for frying
  • Water, as needed

Method

  • Firstly, blanch the green peas for around 5 minutes in hot water.
  • When they are cooler, mix some green chillies into a coarse puree.
  • Next, you must heat oil in a pan and add the cumin seeds.
  • When the cumin seeds crackle, add the peas puree along with the grated ginger while stirring well.
  • Also, add the crumbled potato to the pan and have a thorough mix.
  • Add some salt along with the garam masala, lemon juice and the coriander powder and stir the mixture.
  • Turn off the flame and add the mint leaves and coriander leaves after finely chopping them. Mix them well.
  • Add some water to the cornflour and make a slurry.
  • Prepare a thick Cornflour slurry by mixing cornflour with water.
  • Add a slice of bread in the blender and pulse them coarse to breadcrumbs.
  • Heat the pan with oil and shape the kebab dough. The dough is dipped in cornflour slurry and then the breadcrumbs.
  • These are then placed in the pan and fried until golden brown.

Prawns Rawa Fry

If your guests are looking for some spicy yet juicy prawns, then you can include this in your party menu. It will take some time though, as you must marinate the prawns with a paste of garlic and ginger along with lemon juice, pepper, some salt, and green chillies.

Ingredients

  • 20 king prawns
  • 2 eggs
  • Green chillies – 3, finely chopped
  • Ginger – 1 spoon, minced
  • Freshly ground pepper – ½ spoon
  • Lime juice – 1 spoon
  • Breadcrumbs – 250 gms
  • Rawa – 250 gms
  • Rice flour – ½ cup
  • Oil, as needed

Method

  • Clean the prawns by washing them and pat them to dry.
  • Marinate the prawns as mentioned before.
  • Mix the eggs and flour and blend well while ensuring there aren’t any lumps.
  • Take the breadcrumbs and rawa and mix well.
  • Dip the prawns in the batter and roll them over the rawa and breadcrumb mix for a thorough coating. Then deep-fry till they have a golden tinge.

Baked Cheesy Roti Chips

Ingredients

  • Rotis – 3-4
  • Mozzarella cheese - ¼ cup
  • Taco seasoning – 1 spoon

Method

  • The oven must be heated to 180 degrees Celcius.
  • Take a roti and add some cheese and taco seasoning to one side. Now fold it on the remaining side and press hard.
  • Take a cutter and cut the roti into four slices.

  • Chicken drumsticks – 500 gms

  • Prick the drumsticks with a fork or make slashes with a knife.
  • Make slashes in the drumsticks with a knife.
  • The ingredients must be mixed and leave it marinated for around 5 hours.
  • The drumsticks must be cooked on high for five on one side by covering the pieces.
  • Then turn them on the other side, cover them and cook for another three minutes.
  • Uncover and cook on high for another two minutes.

Pina Colada Prawns

  • 6-7 Prawns
  • Garlic – 2 spoons
  • Cream – ½ cup
  • Coconut milk – 3 spoons
  • 1 cup onions, chopped

  • Pineapple juice – ½ cup

  • Basil leaves, as needed
  • Lemon juice, as needed
  • Chilli oil, as needed
  • Pepper and salt, as needed

Method

  • Marinate the prawns with the paste of garlic and ginger.
  • To it, add some lime juice, pepper, pineapple juice, salt, and pepper. Mix the ingredients well.
  • Take a pan and heat some chilli oil and add some onions. Then put the marinated prawns.
  • Add cream, coconut milk, and pineapple juice to it and stir.

Ingredients

  • Paneer cubes - 300 gms

  • Yoghurt - ¼ cup

  • Ginger – 1 spoon, grated

  • Tomatoes - 1/4 cup, cubed

  • Bell peppers - 1/4 cup, cubed

  • Onion - 1/4 cup, cubed

  • Kashmiri chilli powder – 1 spoon

  • Coriander powder – 1 spoon

  • Red chilli sauce – 1 spoon

  • Garam masala powder – ½ spoon

  • Tandoori masala powder – 1 spoon

  • Lime juice – 1 spoon

  • Oil, as needed


Method

  • Mix the ingredients for a smooth marinade. Ensure the paneer has a good coating. Keep them for around four hours.

  • Take a skewer and spread the marinated paneer on it.

  • Spray oil on the microwave and select tandoori paneer tikka. Allow the microwave to heat.

  • Next, out the lower rack in place and keep the skewer on it and press the start button.

  • The paneer tikka can be had with green chutney.
