- Coat the jar lightly with cooking spray.
- Add 2 eggs and your choice of ingredients like grated cheese, chopped ham and veggies.
- Season it with salt and pepper.
- Now, cover the lid and let it chill overnight.
- When you’re ready to cook, shake the jar contents till they blend well, remove the lid and cover the top with a paper towel.
- Now, microwave for a couple of minutes or till you see the eggs are cooked.
Egg Sandwich
An egg sandwich can be your easy-to-grab breakfast on the move. Here’s a drip-free recipe to avoid the runny yolk spoiling your work clothes:
- Coat the inside of a cup or flat bottom bowl with butter or oil.
- Add 2 large eggs, salt and pepper to taste with 1 tbsp of water.
- Mix the contents with a fork and microwave on high for 30 seconds.
- Stir gently to cook the eggs evenly and continue microwaving for another 30 seconds or till the eggs puff up.
- Now add 2 tbsp of grated cheese and cook until the egg mix is set and the cheese is melted (15-30 seconds).
- You can now carefully transfer the cooked eggs on a toast and top with a sliced avocado or few drops of hot tomato sauce, cover it with another toast and get going!
Quiche in a Mug
Minus a pastry crust, this quiche in a mug is cooked well in a mug and won’t disappoint you.
- Take 1 large egg, 1½ tbsp whole milk, 1 tsp melted unsalted butter, a pinch of salt and fresh ground black pepper, ⅛ cup torn bread pieces, 4 small grape tomatoes halved, 1 tbsp grated cheese, 1 tsp fresh herbs and a bit more for garnishing.
- Proceed by adding the egg, milk, salt, pepper and butter to a microwave safe mug and whisk it all into a perfect mix.
- Add tomatoes, bread, cheese and herbs and stir the mix gently without whisking it.
- Now, place the mug inside the microwave and cook at high heat for a minute till you see the egg is cooked and the quiche is puffed slightly.
- Garnish with fresh herbs.
Microwave Frittata
- For a frittata simply mix 1 tbsp butter, 1 cup cubed ham (fully cooked), ½ cup chopped onion, ¼ cup chopped green pepper, salt and pepper to taste and 4 eggs lightly beaten.
- Take a microwave safe 9” pie plate and place the butter on it, cover and microwave on high for about 20-30 seconds
- Then add ham, green pepper and onion to it.
- Cover and cook it for a minute on high.
- Stir the eggs next with salt and pepper and continue covering and cooking on high for a couple of minutes.
- Once the frittata is set completely, cut it into wedges.
Egg Muffin
Here’s a simple breakfast packed with protein to fuel your day ahead:
- With 5 tbsp all-purpose flour, ¼ tsp baking powder, ⅛ tsp baking soda, ⅛ tsp salt, 2 tbsp milk, 2 tsp melted butter or vegetable oil, 2 tbsp eggs, 1 tbsp grated cheddar cheese, 1 tbsp chopped scallions and 1 small egg, you will have your egg muffin ready in a matter of minutes.
- To cook, mix the flour, baking powder, baking soda and salt in a microwave safe mug.
- Next add all the wet ingredients to it and mix well.
- Make a well in the batter and crack the small egg in its centre.
- Now, spoon the batter from all sides over the top of the egg.
- Place the bowl in the microwave and cook for about 50 seconds - 70 seconds.
- You will know your muffin’s cooked when its firm to touch on the top.
Tips to Cook Eggs in a Microwave
- For microwave cooking always use containers that are microwave-safe and these include glass, ceramic or paper plates that don’t contain any plastic.
- Putting aluminium foil or specific plastics is a complete no!
- Boil your eggs on a stove to avoid the shell explosion inside the microwave and it is better to pierce the yolk and white a few times to prevent splattering as well.
- Beat your eggs to cook them fast and always be mindful about the size of the eggs, as a jumbo egg will need more time to cook as compared to a large one.
