  • Then add ham, green pepper and onion to it.

  • Once the frittata is set completely, cut it into wedges.

  • With 5 tbsp all-purpose flour, ¼ tsp baking powder, ⅛ tsp baking soda, ⅛ tsp salt, 2 tbsp milk, 2 tsp melted butter or vegetable oil, 2 tbsp eggs, 1 tbsp grated cheddar cheese, 1 tbsp chopped scallions and 1 small egg, you will have your egg muffin ready in a matter of minutes.
  • To cook, mix the flour, baking powder, baking soda and salt in a microwave safe mug.
  • Next add all the wet ingredients to it and mix well.
  • Make a well in the batter and crack the small egg in its centre.
  • Now, spoon the batter from all sides over the top of the egg.
  • Place the bowl in the microwave and cook for about 50 seconds - 70 seconds.

  • For microwave cooking always use containers that are microwave-safe and these include glass, ceramic or paper plates that don’t contain any plastic.
