How to Make Paneer at Home
You will find various organic product selling shops in the market that are trusted for ensuring the quality of the product. However, it is very easy to make paneer even at home in just a few steps. Here are the steps that you need to follow to make paneer at home.
Start with Selecting Your Acid
You need milk and a choice of acid to split the milk first. Both lemon juice and vinegar are the most common ones for acid. In the market, most of the times citric acid is used to split the milk. However, at home, other than lemon and vinegar you can also use yoghurt for making paneer. Taste, texture and flavour of the paneer will vary depending on the acid that has been used to make it initially. For instance, yoghurt gives a very creamy, soft yet firm paneer whereas lemon will leave some grainy texture.
Measure the Quantity
Once you have decided on the acid to be used for splitting the milk, make sure that you know the quantity in which it should be used. Too much of acid will leave the odour behind thereby making your paneer smelly.
Start with the Process
Now that we know both the type of acid and the quantity to be used, let us start with the process of making paneer at home which is very simple.
- Put the milk pan on the gas and let the milk come to a boil. Keep the choice of acid handy while the milk is boiling.
- After one boil, switch off the gas and add either 2 tablespoons of vinegar or the same amount of lemon. If you are using yoghurt then add 1/4th cup of it.
- Keep stirring the milk while adding the acid and give it a stir after adding for up to 1 minute. You will notice that the milk will start solidifying but if it does not then turn on the gas and bring it to one more boil. Also, if required, add a bit more of the acid to split the milk and form paneer.
- Turn off the gas immediately as the milk starts to curdle ensuring that the paneer remains soft. Take a cheesecloth and put it over a colander and thereafter pour the mixture over it and wash it with cold water to take away the smell of acid.
- Drain the mixture completely so that you get only the solids and then make a knot of the cloth with the mixture inside to hang it more 30 minutes. Your home-made paneer is ready to be used in various dishes.
