- Chicken - 500 grams
- Mustard Oil – 5 tablespoon
- Onion – 4
- Cardamom – 3
- Cinnamon - 3-inch piece
- Cloves - 3
- Cumin Seeds – ¼ teaspoon
- Grated Ginger - 1 teaspoon
- Grated Garlic - 1 tablespoon
- Tomato – 1
- Cumin Powder - 1 teaspoon
- Kashmiri Red Chilli Powder - 1 tablespoon
- Turmeric Powder – 1.5 teaspoon
- Salt (to taste)
- Sugar – ½ teaspoon
- Garam Masala Powder - ½ teaspoon
- Ghee or Clarified Butter - ½ teaspoon
- Water - ½ cup
- Marinate the washed chicken pieces with salt and turmeric powder for 30 minutes.
- Heat oil in a pan, add the whole spices (cardamom, cloves, and cinnamon) and cumin seeds.
- Add the sliced onions and sauté until they are caramelized.
- Add grated ginger and garlic to the caramelized onion mixture and sauté well.
- Add the chopped tomatoes and cook until they are done.
- Add all the spice powders to the mixture and add a few drops of water to ensure that the spice powders are not burnt.
- Add the marinated chicken pieces to the mixture and add water to the mixture.
- Cover it with a lid and cook the mixture for 10 to 15 minutes over medium heat.
- Finally, add sugar, garam masala powder, and ghee to the cooked chicken and serve hot.

2. Pepper Chicken
- Chicken – ½ kg
- Crushed black pepper - 2 teaspoon
- Yogurt - 3 tablespoon
- Onions – 2 onions sliced
- Ginger garlic crushed - 2 tablespoon
- Green chilies - 3
- Garam masala - 1 teaspoon
- Curry leaves – One sprig
- Coriander powder - 1 teaspoon
- Cumin powder – ½ teaspoon
- Crushed fennel seeds – ¼ teaspoon
- Tomato puree - ½ cup
- Coriander
- Salt
- Marinate the cleaned chicken pieces with yogurt, ginger garlic paste, pepper powder, lime juice, and salt.
- In a pan, heat oil. Add sliced onions and sauté until they turn golden brown.
- Add curry leaves, green chilies, ginger-garlic paste, and saute well.
- Sauté the onion mixture with dry spice powders such as pepper powder, garam masala powder, and coriander and cumin powder.
- Once the raw smell fades from the spice powder, add pureed tomato to the spice mixture.
- Once the tomato puree is cooked, add the marinated chicken pieces.
- Add ½ cup of water to the pan and simmer for 15 minutes.
- Once the water evaporates, garnish with fresh coriander and curry leaves.

- Sweet corn - 1 cup
- Chicken - 200 grams (minced)
- Soy sauce - 1 teaspoon
- Vinegar 1 teaspoon
- Fresh coriander - 1 tablespoon (chopped)
- Black pepper – ¼ teaspoon
- Oil – 1 tablespoon
- Ginger - 1 tablespoon
- Carrots - ½ cup (chopped)
- French beans - ½ cup (chopped)
- Sweet corn - ½ cup
- Chicken stock - 2 litres
- Green chilies - 1 tablespoon
- Honey - 1 tablespoon
- Black pepper – ¼ teaspoon
- Corn-starch - 2 tablespoon + water 50 ml
- Eggs - 2 nos. (Whisked)
- Vinegar - 1 teaspoon
- Spring onion greens - 3 tablespoon
- Salt to taste
- Take a grinding jar. Pulse sweet corn and water into a fine puree.
- In a mixing bowl, add minced chicken, soy sauce, vinegar, fresh coriander, salt, and pepper.
- Mix all the ingredients well and set aside.
- Heat oil in a pan. Add ginger and sauté for few seconds.
- Sauté carrots, French beans, and sweet corn on high heat until they are cooked.
- Add the chicken stock, green chili sauce, honey, salt, and pepper to the pan and mix well.
- Add puree corn mixture to the broth and boil well.
- Shape the chicken mince into roundels and gently drop them into the soup broth.
- Allow the meatballs to cook in the broth.
- Once the meatballs are cooked, add the corn starch and water mixture to the soup and cook until the soup thickens.
- In a bowl, whisk the eggs and add them to the soup along with vinegar and spring onion greens.

- Minced chicken - 650 grams
- Chopped green chili - 1 teaspoon
- Garlic paste - 1 teaspoon

- Butter - 2 tablespoon
- Wheat flour - 4 teaspoon
- Minced onion - 2
- Ginger paste - 1 teaspoon
- Salt - 1 pinch
- Black pepper - 2 pinches
- Potato - 400 gm
- Oregano - 2 pinch
- Milk - 2 tablespoon
- Heat oil in a pan. Sauté onions, chilies, and ginger-garlic paste.
- Add minced chicken to the pan, season with salt and pepper.
- Cooked the minced chicken until done and finish by adding lime and vinegar.
- Boil the potatoes and mash them once they cool.
- Add a pinch of pepper and salt to the mashed potatoes along with olive oil until the mixture.
- In a mixing bowl, add wheat flour and milk. Blend them well without lumps and pour them into the minced chicken mixture.
- Grease a baking tray with butter and dust with flour. Place the chicken mince into the baking tray and spread evenly.
- Spread the mashed potato on the layer of chicken mince.
- Bake for 40 minutes at 180-200 degrees Celsius.
- Remove from oven and allow it to cool.
- Cut the pie into slices and serve warm.

- Thin coconut milk – 1 cup
- Potato (peeled and cubed) - ¼ cup
- Carrot (peeled and cubed) - ¼ cup
- Cashew nut paste - 2 tablespoon
- Thick Coconut milk - 1 cup
- Salt to taste
- Coconut oil - 1 tablespoon
- Small pearl onions (Sliced) – 5
- Curry leaves – A sprig
- Heat coconut oil in a pan. Add the whole spices and sauté for a few seconds.
- In the pan, add onion, ginger, and garlic and fry until they turn translucent.
- Sauté green chilies and curry leaves with the onions.
- Add the cleaned chicken and sauté for a few minutes.
- Add thin coconut milk to the chicken and season with salt.
- Allow the mixture to simmer for 15 minutes.
- Add potatoes, carrots, and cook until the chicken and vegetables are done.
- Grind the soaked cashews into a fine paste along with thick coconut milk extract and simmer for a few minutes.
- In a small pan, heat coconut oil and temper onions until they are golden group and add few curry leaves and fry them as well.
- Pour the tempering over the chicken stew and serve hot.

6. Baked Butter Chicken
- Olive oil – 80 ml
- Garam masala - 3 teaspoon
- Ground turmeric - 2 teaspoon
- Whole chicken - 1
- Lemon - 1
- Garlic cloves - 3
- Ginger – 15 grams
- Red chili - 1
- Tomato puree – 400 grams
- Thick yogurt - 1 cup
- Chicken stock – 1 cup
- Curry leaves – 1 handful
- Take the whole chicken and clean it well.
- In a bowl, add olive oil, turmeric powder, garam masala, and mix well.
- Rub the garam masala and turmeric all over the cleaned chicken.
- Tie the chicken legs together and place a lemon in the cavity.
- In a baking pan, add ginger, garlic, chicken stock, yogurt, tomato puree, curry leaves, salt, and oil masala mixture. Mix all the ingredients well.
- Preheat the oven to 220°C.
- Place the seasoned chicken on the baking tray and bake at 180°C for 30 minutes.
- Once cooked, rest the chicken for 15 minutes before garnishing with lime and fried curry leaves.

7. Chicken Yakhni Pulao
- Sliced Onions – ½ cup
- Garlic Cloves - 6
- Julienned ginger - 3
- Cinnamon stick - 2

- Chicken pieces with skin – ½ kg
- Water – 1.5 cups
- Basmati Rice – 1.5 cups

- Secure the onions, ginger, garlic, whole spices in a cheesecloth and fasten it tightly.
- In a pressure cooker, add the chicken pieces, water, salt, and place the cheesecloth filled with spices.
- Cook all the ingredients in high heat for 10 minutes and allow the pressure to release naturally.
- Discard the cheesecloth bundle.
- Remove the chicken from the broth and leave it aside.
- Add the cleaned and soaked basmati rice to the chicken broth along with garam masala, ghee, and salt.
- Place the cooked chicken on top of the rice.
- Cook over high heat for 4 minutes and allow the cooker to rest for 10 minutes.
- After 10 minutes, combine the ingredients and serve hot.

8. Chicken Karahi
- Oil - 3 tablespoons
- Onion – 1
- Ginger – ¼ cup
- Garlic – 2 tablespoon
- Boneless skinless chicken thighs – ½ kg
- Diced tomatoes – 1.5 cups
- Cumin - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Kashmiri red chili powder - 1 tablespoon
- Turmeric – ¼ teaspoon
- Chopped coriander – ¼ cup
- Ginger julienned – ¼ cup

- In a thick bottomed pan, heat oil and add thinly sliced onions, ginger, garlic and sauté well.
- Add the chicken thighs, diced tomatoes, dry spice powders, and salt. Mix all the ingredients well.
- Allow the ingredients to simmer for 20 minutes until the gravy thickens.
- Alternatively, you can also cook the ingredients in a pressure cooker for three whistles and simmer the gravy without pressure until it is done.
- Garnish with coriander leaves and ginger.

- In a pressure, add butter and add the whole spices and fry for a few seconds.
- Sauté thinly sliced ginger, garlic, and green chilies for a few minutes.
- Add the sliced onions and sauté until they turn translucent.
- Add chopped tomatoes, tomato puree and cook until the raw smell fades.
