  • a few Curry leaves
  • 4 -5 Garlic pods

Steps to making the Chettinad masala kuzhambu

  • Step 1-Apply Heat to the 1/2 tsp of oil in a pan, then add the onions. When it turns golden brown pour the tomato, sauté until the mixture turns pasty
  • Step 2- Add the coconut, fennel seeds together. Grind it till it turns to a fine paste. Put it in a small bowl separately
  • Step 3- Apply heat to the remaining portion of oil, add the bayleaf, fennel seeds and cinnamon. As soon as it crackles pour the onion, garlic, curry leaves and sauté for some minutes till the onions turn brown.
  • Step4- pour the sliced radish and sauté for two minutes. Then add red chilli powder, coriander powder and sauté for a minute. Add 1/2 cup water and the required amount of salt..
  • Step 5- Allow the mixture to boil until the vegetable is done properly, add the coconut paste and allow to boil until the oil separates this process might take up to 9 to 10 minutes. The mixture should be semi-thick, but you can make it runny as you desire..
  • Step 6- sprinkle cut coriander leaves. Serve hot with bowl of rice.

    Steps to Making the Gundruk Ko Soup

  • Step 1- Apply heat to a cooking pan/pot grease it with some mustard oil, roast the soybeans with continuous stirring for about 4-5 mins until the soya beans are crack open. Transfer the roasted soybeans into a bowl.
  • Step 2- With the same pot, add a tbsp of mustard oil, and sauté a bowl of gundruk for around 2 mins with continuous stirring, wait until it starts releasing the fermented aroma. Transfer the gundruk in another small bowl.
  • Step 3- with medium heat, add two tbs of mustard oil in the same pot. Fry fenugreek and mustard seed after oil starts smoking.
  • Step 4- pour the chopped onions, green chillies cut in half and finely chopped/grated garlic and ginger, and fry until light brown.
  • Step 5- Put turmeric powder and then put the chopped tomatoes. Add a tbs of salt according to your desired taste and cumin and coriander powder. Put 2 tbs of water and cook until it turns gravy.
  • Step 6- Put 2-3 cups of water and bring to boil. Add sautéed gundruk, put the lid on and cook for around 8-10 mins in low medium heat. Turn the heat off, squeeze a lime juice and let it cool down for few mins..
  • Step 7- Put the roasted soybeans in the soup and serve in a bowl. Garnish with fresh coriander leaves. You can just slurp the soup or you can have the soup with steamed rice or bread..

  • Step 4- take some hot water, immerse the powdered jaggery and crush it well and then filter to remove impurities and make it ready.
  • Step 5- Take a wide pan, put the cooked gram, and the filtered jaggery syrup and milk. Let it cook for 3-5 minutes.
  • Step 6- Then add coconut milk, cardamom powder — give a quick stir.
  • Step 7- Bring to a boil and turn off the heat. Add ghee, roasted cashews and serve hot or cold.

  • 1 cup split Bengal gram (chana dal)

Steps to Making the Patholi

  • Step 1- Put the chana dal into a big bowl and cover with several inches of cool water; soak it for about 4 to 6 hours go-ahead to drain and rinse.
  • Step 2- put together the green chile peppers, chana dal, and salt in a large bowl; mash into a thick and coarse paste. Add water as needed to help mash, but use as little as possible.
  • Step 3-Apply heat to the oil in a large non-stick pan or pot. Cook the urad dal, dried red chile peppers, curry leaves, mustard seeds, cumin seeds, and asafoetida powder in the hot oil until the seeds begin to splutter, for about 2 to 3 minutes...
  • Step 4- Add the onion and cook until golden brown, about 5 minutes.
  • Step 5- Stir the chana dal paste into the mixture; cook and stir until the dal is cooked through and tender, about 18 to 20 minutes.
  • Step 6- Sprinkle the cilantro and cayenne pepper over the mixture and stir. Cook another 5 minutes.
  • Step 7- Serve hot or cold as it might be required.

  • Step 3-Add turmeric powder, chilli powder and salt. When the extract is done, add the coconut mixture, stir well.
  • Step 4-Let it boil for about two minutes and switch off the stove. Add the buttermilk and stir well.
  • For tempering
  • Step 5- put the oil in a pan, add mustard seeds and one red chilli.
  • Step 6- When the mustard splutters add fenugreek powder and curry leaves and pour this in the mango mix.
